American Airlines' in-flight Indian fare

With all the commerce going on between the United States and India, air traffic between the two countries is burgeoning, and on such a long flight, flyers need feeding.
To that end, American Airlines has rolled out a new menu for First and Business Class flyers on the Chicago O'Hare (ORD) to Delhi (DEL) route. Created by Maneet Chauhan, executive chef of the Vermillion restaurant, the options are:
- Patrani. This is a concoction of coconut mint marinated halibut served with lemon rice and Punjabi saag paneer;
- Dahi Elaichi Rajma, red kidney beans simmered in a green cardamon yogurt base;
- Shrimp Moilee, a shrimp dish, with a delicate turmeric and coconut sauce. It's served with tomato cumin rice and anardana chole - that's garbanzo beans with pomegranate seeds.
